Midsummers Day ...

Pear Zucchini Cake for our Midsummer's Tea
{makes 2 loaves}

2 cups chopped pears
1 cup shredded zucchini
1 cup sugar
1 cup brown sugar
3 eggs
1 cup vegetable oil
1 TBSP vanilla extract
3 cups all purpose flour
2 tsp pumpkin pie spice
1 tsp b. soda
1/2 tsp baking powder
1/2 tsp salt
3/4 cup chopped nuts {optional}
 
Preheat oven to 350 degrees.
Combine first 7 ingredients in a large mixing bowl.  In a smaller bowl, combine flour, spices, b.soda, b.powder and salt.  Add to egg mixture.  Stir in nuts if using.  |Line  2 - 8x4x2 inch loaf pans with parchment paper and divide mixture evenly between the two pans.
Bake in 350 degree oven for 50-60 minutes.  Cool in pans for 10 minutes.  Remove and cool completely on wire racks.

I like your painted stones, I must try this. And the cake looks yum, we call it courgette and its hard to imagine but I'm sure it is. I really must give something else a try, other than my fail safe plain sponge cake! very brave! Heather x
